Chickpeas – The Answer For 2015

Whether you are a vegetarian, flexitarian, paleo practitioner, or just interested in an inexpensive high fiber, high protein staple, chickpeas, (also known as garbanzo beans) are the answer for you! Not only are they delicious and easily available, the ways in which you can use them is almost endless.

Of course there is good old hummus with its many variations, but because of their mild flavor, chickpeas lend themselves to almost any dish you can imagine, and probably a few you never dreamed of. Check out this recipe for Braised Coconut Spinach & Chickpeas with Lemon – served over a sweet potato!  There is also recipe for Chickpeas and Chorizo Soup from The Kitchn that has been calling my name – along with ten other sumptuous garbanzo sporting recipes.

If you want to be super thrifty, you can soak and cook your own chickpeas for pennies, (One pound of dry chickpeas yields about four pints.) But in my book convenience rules, and seriously, you just can’t beat pulling out a 92 cent can of Wild Oats Organic Chickpeas, adding some stove time and sitting down to a great meal.

My most recent garbanzo adventure was a roasted red pepper hummus that did not hang around for after dinner engagements.

The list of healthy benefits associated with chickpeas is almost as long as the list of uses. According to Medical News Today, “A one-cup serving of raw chickpeas provides 50% of daily potassium needs, 2% vitamin A, 21% calcium, 13% vitamin C, 69% iron, 2% sodium, 55% vitamin B-6 and 57% magnesium. Additionally, chickpeas contain vitamin K, folate, phosphorus, zinc, copper, manganese, choline and selenium.”

The type of fiber specific to garbanzos is a non-soluble one that “stays with you,” almost all the way through the digestive process. As a result, chickpeas have been proven to reduce cholesterol, curb hunger and aid in reducing calorie intake by helping you stay satiated.

A study by “American Journal of Clinical Nutrition” reports that, women who ate legumes like chickpeas were 40 percent less likely to get type 2 diabetes than women that who didn’t.  That equals Can do!

Entire books have been written on the health benefits of this humble crop. See Patsy Catsos, MS, RDN, LD, author of “IBS – Free at Last!” – But really, the best reason to eat them is that they taste great! Try them as a meat replacement in salads, soups stews, braised, curried, or in traditional meals like Chana Masala.

Feeling adventurous? Check out the colorful variations of our beloved tan or yellow Kabuli chickpea, the dark Desi, or the green harbhara. Studies have shown that these cousins of the garbanzo are even higher in beneficial antioxidants than their more familiar fellows. No matter what your diet or food preference is, no doubt you would be hard pressed to find another non animal protein source that is that is more nutritious, versatile and satisfying. A surprising way to help your toddler with nighttime coughing!


If you ever deal with a child with a nighttime cough, this information should help you!  What I am about to share was published in the Journal Pediatrics last month.  The information is intended to help doctors who care for young children to validate their current practices or to improve their practices.  I’ll share it with you so we are all “in the know”.

The study was done at Penn State College of Medicine and looked specifically at the treatment of acute cough.   A group of 119 children were included.  They all:
●  had coughs of 7 days duration or less
●  were between  2 months and 47 months of age
●  had not received any type of cough medicine before the office visit.

The purpose of the study was to determine if a single dose of “cough medicine” given at bedtime could improve the child’s sleep.  The parents (some were first-time parents) completed a questionnaire on the day they first brought their child to the clinic and again the next day.  All children were placed into 1 of 3 test groups:
●  no bedtime treatment
●  a single dose of pasteurized agave nectar (a sweet nectar with no known anti-cough effect)
●  a single dose of a “placebo” which was grape flavored sweetened water

A placebo is something that has no medicine in it, basically thought of as a “sugar pill”.  The patient doesn’t know that it is not real medicine.  If the placebo improves the patient’s signs and symptoms as well as, or better than medicine, it is called the “placebo effect”.

The parents who went home with the “cough medicine” did not know what they were given.  The parents in all 3 groups were surveyed the following day, specifically for the child’s:
●  cough frequency
●  cough severity
●  congestion severity
●  cough effect on child’s sleep
●  cough effect on parent’s sleep

The Results?  The two groups that received some kind of cough “medicine” have improvements in all areas at a much higher rate than the “no” treatment group.  Both the agave nectar and the flavored water had the same results.  Neither of these contained any real medicine, and yet they both improved the various issues  … and both by the same amount!  That boils down to a significant “placebo effect” with the special treatment, in this case, the cough “medicine”.

OK, so what might that mean for you and your children?  Here are my professional and personal thoughts:
●  you certainly don’t want to miss anything serious, so take your sick child to the doctor
●  don’t be a parent who insists upon “something for the cough”, be a parent who insists upon appropriate, excellent care of your child
●  if the doc feels a cough medicine will actually be helpful, they’ll prescribe it
●  consider the benefit of the placebo effect with your toddler age and older children.

At toddler age and older, you might want to create a special ritual to help them feel or sleep better when they have a cough.  What type of special thing?  Well, here are a few ideas –
●  a special herbal tea that you mix with “just the right amount” of milk and honey
●  a special backrub or foot rub or tapping on their back in a rhythmic fashion for 3 minutes
●   heck, even a teaspoon of actual agave nectar!
I don’t recommend that we pretend to give our children “medicine” that we know is not medicine.  You don’t want your child to grow up thinking that pills are a solution for life’s challenges!!

We hate to see our children sick.  Getting the OK from the doc makes sense when you are not sure.  You probably have your own special rituals already to help them!  Great!  In any case, we know the placebo effect does help!

Are you a real “foodie”?

Everyone thinks they know a “foodie”. It’s that guy taking pictures of everything he eats and posting it immediately on Instagram. It’s that girl who isn’t ashamed to eat her weight in spaghetti and meatballs and then brag about it to her friends. Or, maybe it’s you who I’m talking about. You know who you are, foodie!

I have been a foodie for my whole life. First favorite food- pork dumplings.  My immediate reaction is to exclaim, “Yummm!” after taking a bite of something super tasty. However, I was never a fan of vegetables through adolescence, and I wouldn’t eat broccoli unless it was covered in cheese sauce until the age of 20 when I realized that wow, broccoli does taste pretty good raw or steamed with a little lemon juice and parmesan added.

The reason why I became a dietitian is because I wanted to learn everything about food. I knew early on that I didn’t want to work as a chef in an industrial kitchen so I opted to study nutrition in the classroom instead of going to culinary school. I do cook for “a living” though, combining my love of being in the kitchen with improving health and wellbeing of those I care for.

I feel the best way we should watch what we E.A.T. is to: Embrace life. Amaze yourself. Try everything! Real foodies follow this motto.

As much as I encourage my clients and patients to “watch what they eat,” it’s important to not become too obsessed with what you are eating. Obsessing can have detrimental effects on your mental wellbeing and lessen the healthy connection between you and the food on your plate. E.A.T.ing is a personal motto and applies to all areas of your life, with the intention of being a “well-rounded” person, and doesn’t just have to do food. It has to do with your entire life!

Try to enjoy every day and remind yourself that it’s okay if that picture of the delicious meatloaf your aunt made did not turn out as well as you would’ve liked. The fact that you sat down with family to enjoy a delicious meal is what really counts in life. Here’s to you, real foodie!
